Biochemistry of Muscle
Growth as It Affects Meat Quality
Muscle proteins and their distribution in
muscle tissue are important at harvest because
of their impact on meat quality and consumer
acceptance. Manipulation of muscle protein
distribution to alter metabolism and meat
quality is being investigated by Michigan
State University, Washington State University,
South Dakota State University, and Utah State
University among others involved in CSREES-sponsored Molecular
Mechanisms Regulating Skeletal Muscle Growth
and Differentiation (NC-131) multistate
project. This basic understanding of muscle
growth will help farmers and researchers
understand muscle growth regulation and product
quality.
